Varanasi, the spiritual capital of India, is also a paradise for food lovers, offering a vibrant and diverse street food scene that reflects its rich cultural heritage. The narrow, bustling lanes are filled with iconic dishes that are a must-try for any visitor.

1) Kachori Sabzi: A traditional and highly popular breakfast item, it consists of deep-fried, crispy kachoris (puffed pastries) served with a spicy potato and chickpea or pumpkin curry (sabzi). The Ram Bhandar and Neelu Kachori Bhandar are legendary spots for this dish.

2) Tamatar Chaat: A unique Banarasi specialty, this tangy and spicy chaat is made with a base of mashed potatoes and tomatoes, cooked with a special blend of local spices and served in traditional kullads (earthen pots). Kashi Chat Bhandar and Deena Chaat Bhandar are renowned for their authentic Tamatar Chaat.

3) Lassi and Thandai: Varanasi's lassi is a creamy, rich yogurt-based drink often topped with malai (cream) and rabri (sweetened milk solids) and served in an earthen pot. Pehlwan Lassi is a famous shop that has been serving authentic lassi for generations. Thandai, a refreshing milk-based drink mixed with nuts, spices, and sometimes a hint of saffron, is another iconic beverage, especially popular during festivals.

4) Malaiyyo / Malai Makhan: A seasonal winter delicacy, Malaiyyo is a creamy, foamy, and saffron-infused sweet prepared from churned milk, often served in a clay pot and garnished with pistachios and almonds. Chooda Matar: A flavorful and healthy evening snack made from flattened rice (poha) sautéed with green peas, spices, and sometimes a touch of sweetness.

5) Baati Chokha: While more of a complete meal, this local specialty from the region features roasted wheat balls (baati) served with a spicy mix of roasted and mashed vegetables (chokha), typically potato, brinjal, and tomato, along with a rich lentil curry (dal).

6) Banarasi Paan: No food tour of Varanasi is complete without trying the world-famous Banarasi Paan, a betel leaf preparation filled with various sweet and flavorful ingredients, known for its unique taste and as a traditional digestive aid.
